Ingredients

The butter base

  • 1 pint heavy whipping cream
  • to taste none flaked sea salt or kosher salt

Optional garlic-herb variation

  • 1 clove garlic
  • 1 teaspoon fresh parsley, minced
  • 1 tablespoon fresh chives, minced

Instructions

  1. Fill a jar halfway with heavy whipping cream, seal it, and shake until a buttery lump forms.
  2. Alternatively, pour at least 1 pint of cream into a mixer or blender and blend until the butter and buttermilk separate.
  3. Strain the mixture through a cheesecloth or towel to separate the butter from the buttermilk.
  4. Twist the cloth around the butter and squeeze out excess liquid.
  5. Transfer the butter to a cutting board and sprinkle with salt, kneading it to incorporate the salt.
  6. For the garlic-herb version, mix in the minced garlic, chives, and parsley.
  7. Store the butter in a container in the refrigerator.
