Ingredients
The butter base

pint
heavy whipping cream
to taste
none
flaked sea salt or kosher salt
Optional garlic-herb variation

teaspoon
fresh parsley, minced

tablespoon
fresh chives, minced
Instructions
Fill a jar halfway with heavy whipping cream, seal it, and shake until a buttery lump forms.
Alternatively, pour at least 1 pint of cream into a mixer or blender and blend until the butter and buttermilk separate.
Strain the mixture through a cheesecloth or towel to separate the butter from the buttermilk.
Twist the cloth around the butter and squeeze out excess liquid.
Transfer the butter to a cutting board and sprinkle with salt, kneading it to incorporate the salt.
For the garlic-herb version, mix in the minced garlic, chives, and parsley.
Store the butter in a container in the refrigerator.
