Instant Pot Strawberry Jam

Instructions
- Prepare the strawberries by washing, drying, and removing the stems.
- Dice the strawberries and add them to the Instant Pot without adding any liquid.
- Add sugar to the pot without stirring.
- Close the lid and set the steam release knob to Sealing.
- Select Pressure Cook/Manual and set the timer for 1 minute at high pressure.
- After cooking, let the pot sit for 15 minutes for a natural release.
- Open the lid once the pin drops, and turn on the Sauté setting at low heat.
- Stir in the lemon juice and let the mixture simmer for about 5 minutes, stirring frequently.
- If desired, mix corn starch and cold water, then stir into the jam to thicken.
- Transfer the jam to clean jars and refrigerate for up to 2 weeks.
