Ingredients

The jam

  • 4 cups Fresh Ripe Strawberries, chopped
  • ½ cup Sugar
  • 2 tablespoons Lemon Juice, fresh

Optional thickening

  • 2 teaspoons Corn Starch
  • 3 teaspoons Cold Water
  • to taste Fruit Pectin

Instructions

  1. Prepare the strawberries by washing, drying, and removing the stems.
  2. Dice the strawberries and add them to the Instant Pot without adding any liquid.
  3. Add sugar to the pot without stirring.
  4. Close the lid and set the steam release knob to Sealing.
  5. Select Pressure Cook/Manual and set the timer for 1 minute at high pressure.
  6. After cooking, let the pot sit for 15 minutes for a natural release.
  7. Open the lid once the pin drops, and turn on the Sauté setting at low heat.
  8. Stir in the lemon juice and let the mixture simmer for about 5 minutes, stirring frequently.
  9. If desired, mix corn starch and cold water, then stir into the jam to thicken.
  10. Transfer the jam to clean jars and refrigerate for up to 2 weeks.
