Agedashi Tofu

Ingredients

The tofu

  • 1 block Tofu
  • as needed cup Cornstarch
  • as needed cup Oil (for deep frying)

The tentsuyu sauce

  • ¾ cup Dashi (or Japanese fish stock)
  • 2-3 tablespoons Soy sauce (to taste)
  • 3 tablespoons Sake
  • 2 tablespoons Mirin
  • ¾ tablespoon Sugar

The toppings

  • as needed grams Daikon (peeled and grated)
  • as needed grams Ginger (peeled and grated, optional)
  • as needed grams Green onions (or scallions, sliced)
  • as needed grams Dried bonito flakes (or katsuobushi)

Instructions

  1. Cut the tofu into small pieces and pat dry with paper towels, then coat with cornstarch.
  2. Simmer the tentsuyu sauce ingredients in a small saucepan without boiling.
  3. Heat oil in a wok or frying pan and deep fry the tofu until light brown and crispy, then drain excess oil on paper towels.
  4. Serve the tofu in a bowl, pour tentsuyu sauce over it, and garnish with grated daikon, chopped scallions, and bonito flakes.
