Slow Cooker Chicken Banh Mi

Ingredients

  • 1 half onion (sliced)
  • 1 ½ pounds chicken thighs (boneless and skinless)
  • 3 tablespoons toasted sesame oil
  • 3 tablespoons lime juice
  • 3 cloves garlic (minced)
  • 1 tablespoon honey
  • 1 teaspoon ginger (ground)
  • ½ teaspoon salt
  • ½ teaspoon cayenne pepper (red)

Instructions

  1. Place the sliced onion in the bottom of the slow cooker and add the chicken thighs on top.
  2. Whisk together the sesame oil, lime juice, garlic, honey, and spices, then pour over the chicken.
  3. Cook on high for 4 hours.
  4. Shred the chicken with two forks and mix it into the sauce with the onions.
  5. Serve on a sandwich with pickled or fresh veggies.
