Ingredients

The toast

  • 2 slices sourdough bread

The topping

  • 1 large apple (honey crisp, pink lady, or gala)
  • 1 tablespoon coconut oil or butter or vegan butter
  • a pinch cinnamon, cardamom or nutmeg
  • a pinch salt
  • 1-2 tablespoons maple syrup

Optional additions

  • almond butter
  • dried fruit (raisins, currants, etc.)
  • peanut butter
  • cashew butter

Instructions

  1. Slice the apples into ½-inch slices and sauté them in coconut oil or butter with a pinch of salt until tender.
  2. Toast the sourdough bread while the apples are cooking.
  3. Once the apples are tender, add cinnamon (or other spices) and cook for another minute.
  4. Drizzle maple syrup over the apples, stir, and let them caramelize briefly.
  5. Spoon the warm apples over the toast, allowing the drippings to moisten the bread. Optionally, spread almond butter on the toast before adding the apples.
