Ingredients

The French Toast

  • 2 tablespoons ground flaxseed
  • 2 tablespoons almond meal
  • 1 tablespoon nutritional yeast
  • 1 tablespoon maple syrup
  • 2 cups almond milk or milk of choice
  • 1 cup pure pumpkin
  • seeds from ½ a vanilla bean or 2 teaspoons vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 10 slices gluten free or sprouted wheat bread or other bread of choice

The Topping

  • 3 fresh apples, chopped
  • 2 tablespoons coconut butter
  • 1 teaspoon cinnamon
  • ½ cup water
  • 1 cup chopped pecans

The Icing

  • 3 tablespoons date paste
  • 6 tablespoons almond milk or milk of choice
  • 1 tablespoon coconut butter
  • ¼ teaspoon Himalayan pink salt

Instructions

  1. Mix flax, almond meal, nutritional yeast, maple syrup, milk, vanilla, and pumpkin in a deep dish and refrigerate.
  2. Chop apples and melt coconut butter in a pan over low heat, then add water, apples, and cinnamon, covering to cook until soft.
  3. Remove the French toast mixture from the fridge and dip slices of bread into it, then cook on a griddle until browned on each side.
  4. Prepare the icing by warming all icing ingredients together until melted and combined.
  5. Serve the French toast topped with sautéed apples and drizzle with icing.
