Ingredients

The base

  • 8 slices day-old ciabatta or sourdough bread

The mixture

  • ¾ cup almond milk
  • ½ cup pumpkin puree
  • 1 tablespoon maple syrup
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • teaspoon sea salt
  • to taste coconut oil (for brushing)

Optional toppings

  • to taste toasted almonds
  • to taste pecans
  • to taste diced apple
  • to taste powdered sugar

Instructions

  1. Whisk together almond milk, pumpkin puree, maple syrup, cinnamon, nutmeg, and salt in a medium bowl.
  2. Place the bread slices on a large platter or baking dish and drizzle with the pumpkin mixture, spreading it to coat all sides.
  3. Heat a non-stick skillet to medium heat and brush with coconut oil.
  4. Add the bread slices and cook until golden brown, about 2 minutes per side, adjusting heat as necessary.
  5. Serve with maple syrup and desired toppings.
