Ingredients

The custard

  • 1 cup unsweetened almond milk
  • 1 unit flax egg
  • 1 teaspoon vanilla extract
  • teaspoons pumpkin spice
  • ½ teaspoon cinnamon
  • ½ cup pumpkin puree
  • 2 teaspoons maple syrup
  • 8 slices thick toast bread

For topping

  • to taste unit maple syrup
  • to taste unit extra cinnamon
  • to taste unit coconut cream
  • to taste unit candied pecans

Instructions

  1. Mix all the custard ingredients except the bread in a bowl and whisk together.
  2. Place the mixture in the freezer for about 15 minutes to thicken.
  3. Heat 2-3 tablespoons of vegan butter in a pan or griddle over medium-high heat.
  4. Dip the toast into the custard mixture briefly (do not soak) and place on the griddle.
  5. Cook for 3 to 5 minutes on each side until golden and crispy.
  6. Serve immediately topped with maple syrup, cinnamon, coconut cream, and any other desired garnishes.
