Vegan Pumpkin French Toast

Instructions
- Mix all the custard ingredients except the bread in a bowl and whisk together.
- Place the mixture in the freezer for about 15 minutes to thicken.
- Heat 2-3 tablespoons of vegan butter in a pan or griddle over medium-high heat.
- Dip the toast into the custard mixture briefly (do not soak) and place on the griddle.
- Cook for 3 to 5 minutes on each side until golden and crispy.
- Serve immediately topped with maple syrup, cinnamon, coconut cream, and any other desired garnishes.
