Cider Baked Apple Slices

Instructions
- Preheat the oven to 325°F and slice the apples, leaving the peel on.
- In a small pot, combine the butter, maple syrup, coconut sugar, vanilla, cinnamon, and nutmeg, then bring to a soft boil and reduce to low for 5 minutes until thickened.
- Pour the caramelized mixture over the apples in a bowl and mix thoroughly.
- Transfer the caramelized apples to a large casserole dish and pour the apple juice and vinegar mixture over them.
- Sprinkle with extra sugar and/or nuts if desired.
- Bake in the oven for 1 hour, stirring the apples halfway through.
- Serve immediately or refrigerate for later use, reheating when ready.
