Cider Baked Apple Slices

Ingredients

The base

  • ½ cup butter or vegan butter/ghee
  • cup coconut sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 2–4 tablespoons maple syrup

The apples

  • 5–6 cups sliced baking apples

The liquid

  • ½ cup apple juice mixed with 1 tablespoon apple cider vinegar

Optional toppings

  • cup toasted nuts

Instructions

  1. Preheat the oven to 325°F and slice the apples, leaving the peel on.
  2. In a small pot, combine the butter, maple syrup, coconut sugar, vanilla, cinnamon, and nutmeg, then bring to a soft boil and reduce to low for 5 minutes until thickened.
  3. Pour the caramelized mixture over the apples in a bowl and mix thoroughly.
  4. Transfer the caramelized apples to a large casserole dish and pour the apple juice and vinegar mixture over them.
  5. Sprinkle with extra sugar and/or nuts if desired.
  6. Bake in the oven for 1 hour, stirring the apples halfway through.
  7. Serve immediately or refrigerate for later use, reheating when ready.
