Ingredients

The potatoes

  • 4 pounds russet potatoes, peeled and cubed
  • 1 cup chicken broth (or water)
  • ¼ cup ghee or butter
  • 4 cloves garlic, roughly chopped
  • 1 tsp sea salt

The toppings

  • 4 strips crispy cooked bacon, chopped
  • ½ cup homemade ranch or store-purchased
  • 6 oz shredded cheddar cheese
  • ¼ cup chopped chives

Instructions

  1. Cut the potatoes into 1- to 1½-inch chunks and place them in the slow cooker.
  2. Add ghee or butter, chicken broth, garlic, and salt to the slow cooker.
  3. Cover and cook on HIGH for 4 hours or until the potatoes are tender.
  4. Mash the potatoes in the slow cooker, adding extra broth if needed for desired consistency.
  5. Stir in bacon, ranch dressing, cheese, and chives. Mix well.
  6. Top with additional cheese, ranch dressing, and bacon if desired.
  7. Serve immediately or keep warm in the slow cooker until ready to serve.
