Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper or greased foil.
- Wash and chop the cauliflower into evenly sized florets.
- Crush the tortilla chips and set them aside in a small bowl.
- In a large bowl, whisk together the flour, starch, non-dairy milk, black pepper, sea salt, and garlic powder until smooth.
- Coat the cauliflower florets in the batter using a spoon or spatula.
- Roll the coated cauliflower in the crushed tortilla chips until fully covered.
- Place the coated cauliflower on the baking sheet and bake for 20-22 minutes until crispy.
- While baking, prepare the sauce by whisking together all sauce ingredients in a bowl until combined.
- Remove the cauliflower from the oven and dip each piece into the sauce, then return to the baking sheet.
- Bake the coated cauliflower for an additional 5 minutes.
- Garnish with chopped scallions and serve immediately.
