Ingredients

The cauliflower bites

  • 1 large head cauliflower
  • 2 cups crushed tortilla chips
  • ¾ cup flour
  • 3 tablespoons tapioca starch or arrowroot starch or cornstarch
  • ¾ cup non-dairy milk
  • ½ teaspoon ground black pepper
  • ½ teaspoon sea salt
  • ½ teaspoon garlic powder

The sauce

  • cup coconut sugar
  • ¼ cup soy sauce or coconut aminos
  • ¼ cup pineapple juice
  • 1 tablespoon tapioca starch or arrowroot starch or cornstarch
  • 1 clove garlic
  • ½ teaspoon ground ginger
  • ¼ teaspoon crushed red pepper flakes
  • 3 tablespoons sesame seeds
  • to taste scallions (for garnishing)

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper or greased foil.
  2. Wash and chop the cauliflower into evenly sized florets.
  3. Crush the tortilla chips and set them aside in a small bowl.
  4. In a large bowl, whisk together the flour, starch, non-dairy milk, black pepper, sea salt, and garlic powder until smooth.
  5. Coat the cauliflower florets in the batter using a spoon or spatula.
  6. Roll the coated cauliflower in the crushed tortilla chips until fully covered.
  7. Place the coated cauliflower on the baking sheet and bake for 20-22 minutes until crispy.
  8. While baking, prepare the sauce by whisking together all sauce ingredients in a bowl until combined.
  9. Remove the cauliflower from the oven and dip each piece into the sauce, then return to the baking sheet.
  10. Bake the coated cauliflower for an additional 5 minutes.
  11. Garnish with chopped scallions and serve immediately.
