Paleo Chocolate Raspberry Cookie Sandwiches

Ingredients

The Cookies

  • 1 ½ cups almond butter
  • ½ cup melted coconut oil
  • ¾ cup coconut sugar
  • 1 whole egg
  • 2 cups almond flour

The Filling

  • ½ cup almond butter
  • 2 tbsp melted coconut oil
  • 1 bar Hu Kitchen Cashew Butter & Raspberry Bar, melted
  • ½ cup raspberries

Instructions

  1. 1. Preheat the oven to 350°F and line a cookie sheet with parchment paper.
  2. 2. In a medium bowl, mix the almond butter, melted coconut oil, and coconut sugar.
  3. 3. Add the egg and then mix in the almond flour until the dough is thick.
  4. 4. Scoop about 2 tablespoons of dough onto the baking sheet and flatten with your finger.
  5. 5. Bake for 12-13 minutes and let cool completely.
  6. 6. While the cookies are baking, prepare the filling by melting the chocolate bar and mixing it with almond butter and coconut oil.
  7. 7. Mash the raspberries.
  8. 8. Spoon about 1 tablespoon of the chocolate-almond butter filling on a cookie, add 1 teaspoon of mashed raspberry, and sandwich with another cookie.
  9. 9. Repeat until all cookies are sandwiches.
