Paleo Chocolate Raspberry Cookie Sandwiches

The Filling

almond butter

Instructions
- 1. Preheat the oven to 350°F and line a cookie sheet with parchment paper.
- 2. In a medium bowl, mix the almond butter, melted coconut oil, and coconut sugar.
- 3. Add the egg and then mix in the almond flour until the dough is thick.
- 4. Scoop about 2 tablespoons of dough onto the baking sheet and flatten with your finger.
- 5. Bake for 12-13 minutes and let cool completely.
- 6. While the cookies are baking, prepare the filling by melting the chocolate bar and mixing it with almond butter and coconut oil.
- 7. Mash the raspberries.
- 8. Spoon about 1 tablespoon of the chocolate-almond butter filling on a cookie, add 1 teaspoon of mashed raspberry, and sandwich with another cookie.
- 9. Repeat until all cookies are sandwiches.
