Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, whisk together the egg, egg white, vanilla extract, and coconut sugar.
- Add almond flour, coconut flour, sea salt, and baking soda to the mixture and stir until the dough is thick.
- Fold in the chocolate chips and gently crush the raspberries before adding them to the dough.
- Scoop the dough onto the baking sheet to form 9 large cookies or 12-14 smaller cookies.
- Bake for 15-17 minutes, then let the cookies cool completely.
- Serve immediately or store in an airtight container for up to one week.
