Ingredients

  • 1 large Egg
  • 1 large Egg White
  • 2 teaspoons Vanilla Extract
  • ¾ cup Coconut Sugar
  • 1 ¾ cups Almond Flour
  • ¼ cup Coconut Flour
  • ½ teaspoon Sea Salt
  • ¾ teaspoon Baking Soda
  • 1 cup Chocolate Chips
  • 1 cup Fresh Raspberries

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the egg, egg white, vanilla extract, and coconut sugar.
  3. Add almond flour, coconut flour, sea salt, and baking soda to the mixture and stir until the dough is thick.
  4. Fold in the chocolate chips and gently crush the raspberries before adding them to the dough.
  5. Scoop the dough onto the baking sheet to form 9 large cookies or 12-14 smaller cookies.
  6. Bake for 15-17 minutes, then let the cookies cool completely.
  7. Serve immediately or store in an airtight container for up to one week.
