Instant Pot Mashed Sweet Potatoes

Ingredients

The potatoes

  • 2 ½ pounds sweet potatoes
  • 2 teaspoons kosher salt

The flavorings

  • 4 tablespoons unsalted butter
  • 3 cloves garlic
  • 1 cup whole milk
  • ½ teaspoon ground black pepper
  • 1 tablespoon chopped fresh herbs

Instructions

  1. Add ¾ cup warm water and 2 teaspoons salt to the Instant Pot, then place the sweet potato chunks in a steamer basket inside.
  2. Cover and cook on high pressure for 8 minutes, then immediately release the pressure.
  3. Drain the potatoes and remove the basket, then return the pot insert to the Instant Pot and set to sauté.
  4. Melt the butter and add the garlic, cooking until fragrant.
  5. Turn off the Instant Pot, add the drained potatoes, milk, pepper, herbs, and remaining salt.
  6. Using a hand mixer, beat the potatoes until combined and at your desired consistency, being careful not to overmix.
  7. Transfer to a serving bowl and sprinkle with additional herbs if desired.
