Pork and Sauerkraut

Instructions
- Preheat the oven to 400° Fahrenheit.
- Pat the pork loin dry and season with salt and pepper.
- Melt butter in a large pot or Dutch oven over medium-high heat.
- Sear the pork in the melted butter until golden brown on all sides.
- Remove the pork from the pot and set aside.
- Add sauerkraut to the pot in an even layer.
- Sprinkle chopped onion, apple, and brown sugar over the sauerkraut.
- Nestle the seared pork loin back into the pot on top of the sauerkraut.
- Cover the pot with a lid and bake for 1 ½ to 2 hours, until the pork reaches 150° Fahrenheit.
