Pork and Sauerkraut

Ingredients

  • 2-3 pound boneless pork loin roast
  • to taste salt
  • to taste pepper
  • 2 tablespoons butter
  • 32 ounces sauerkraut
  • 1 onion
  • 1 apple
  • ½ cup brown sugar

Instructions

  1. Preheat the oven to 400° Fahrenheit.
  2. Pat the pork loin dry and season with salt and pepper.
  3. Melt butter in a large pot or Dutch oven over medium-high heat.
  4. Sear the pork in the melted butter until golden brown on all sides.
  5. Remove the pork from the pot and set aside.
  6. Add sauerkraut to the pot in an even layer.
  7. Sprinkle chopped onion, apple, and brown sugar over the sauerkraut.
  8. Nestle the seared pork loin back into the pot on top of the sauerkraut.
  9. Cover the pot with a lid and bake for 1 ½ to 2 hours, until the pork reaches 150° Fahrenheit.
