Crock Pot Pork and Sauerkraut

Instructions
- Heat a skillet over medium-high heat and add olive oil.
- Brown the ribs on one side for about 4 minutes, then season with salt and pepper.
- Flip the ribs and brown the other side.
- Transfer the ribs and juices to a slow cooker.
- Add sliced onion and garlic over the ribs.
- Sprinkle caraway seeds over the ribs and onion.
- Drain half of the sauerkraut juice, then add the sauerkraut and remaining juice to the slow cooker.
- Add the diced apple and apple juice.
- Cook on Low for 8 hours or High for 4 hours until the ribs are tender.
- Taste and adjust salt and tartness with remaining sauerkraut juice if desired.
- Serve hot.
