Instant Pot Kielbasa and Sauerkraut

Instructions
- 1. Set the Instant Pot to Sauté and heat the vegetable oil, then brown the kielbasa and remove it to a bowl.
- 2. Add diced onion to the pot and stir, followed by the carrots, cooking for a minute or two.
- 3. Stir in the salt, pepper, and caraway seeds.
- 4. Add the wine and cook for a couple of minutes while deglazing the pot.
- 5. Stir in the garlic, then add the potatoes and apple.
- 6. Return the kielbasa to the pot along with the sauerkraut and chicken broth, stirring to combine.
- 7. Close the lid, set the knob to sealing, and cancel the sauté mode.
- 8. Set the Instant Pot to Pressure Cook on high for 8 minutes.
- 9. After cooking, let the pressure release naturally for 10 minutes, then manually release any remaining pressure.
- 10. Stir the contents and serve hot, garnished with parsley if desired.
