Instant Pot Kielbasa and Sauerkraut

Ingredients

  • 2-3 TBSP Vegetable Oil
  • 1 ½ lbs Kielbasa, cut into 1.5 inch chunks
  • 1 32 oz jar Sauerkraut (drain ½ of the liquid)
  • 1 med Onion, diced
  • 2 cloves Garlic, pressed or minced
  • 1 Tbsp Caraway Seeds
  • ½ tsp Kosher Salt
  • ½ tsp Black Pepper
  • cup Dry White Wine (or use apple juice)
  • 3 Small Gold Potatoes, cubed
  • 3 Medium Carrots cut into 1 ½ inch pieces
  • 1 Apple (cored, peeled and large diced)
  • 2 cups Chicken Broth
  • Parsley Garnish (optional)

Instructions

  1. 1. Set the Instant Pot to Sauté and heat the vegetable oil, then brown the kielbasa and remove it to a bowl.
  2. 2. Add diced onion to the pot and stir, followed by the carrots, cooking for a minute or two.
  3. 3. Stir in the salt, pepper, and caraway seeds.
  4. 4. Add the wine and cook for a couple of minutes while deglazing the pot.
  5. 5. Stir in the garlic, then add the potatoes and apple.
  6. 6. Return the kielbasa to the pot along with the sauerkraut and chicken broth, stirring to combine.
  7. 7. Close the lid, set the knob to sealing, and cancel the sauté mode.
  8. 8. Set the Instant Pot to Pressure Cook on high for 8 minutes.
  9. 9. After cooking, let the pressure release naturally for 10 minutes, then manually release any remaining pressure.
  10. 10. Stir the contents and serve hot, garnished with parsley if desired.
