Ingredients

The main mixture

  • 2 pounds sauerkraut
  • 1 medium apple
  • 1 teaspoon caraway seeds
  • ¼ cup brown sugar

The meat

  • 12 ounces bacon
  • 1 ½ pounds kielbasa

The aromatics

  • 1 medium onion

Instructions

  1. Combine sauerkraut, diced apple, caraway seeds, and brown sugar in a large saucepan or Dutch oven.
  2. Bring to a simmer over medium heat, then reduce to medium-low, cover, and simmer for 90 minutes to 2 hours, stirring occasionally.
  3. Preheat the oven and bake bacon on a foil-lined baking sheet for 20-25 minutes until crisp.
  4. Remove bacon from the oven, drain on paper towels, and crumble.
  5. Slice the onion and kielbasa into 1" pieces.
  6. In a frying pan, heat bacon drippings and add onions and kielbasa, cooking for 10-15 minutes until caramelized.
  7. Transfer the onion, sausage, crumbled bacon, and sauerkraut mixture to a slow cooker and cook on high for 2-3 hours or low for 4-6 hours.
