Instructions
- Combine sauerkraut, diced apple, caraway seeds, and brown sugar in a large saucepan or Dutch oven.
- Bring to a simmer over medium heat, then reduce to medium-low, cover, and simmer for 90 minutes to 2 hours, stirring occasionally.
- Preheat the oven and bake bacon on a foil-lined baking sheet for 20-25 minutes until crisp.
- Remove bacon from the oven, drain on paper towels, and crumble.
- Slice the onion and kielbasa into 1" pieces.
- In a frying pan, heat bacon drippings and add onions and kielbasa, cooking for 10-15 minutes until caramelized.
- Transfer the onion, sausage, crumbled bacon, and sauerkraut mixture to a slow cooker and cook on high for 2-3 hours or low for 4-6 hours.
