Bratwursts and Sauerkraut

Ingredients

The sausages and onions

  • 2 tablespoons butter
  • 1 package bratwurst sausages, fresh
  • 1 medium-large sweet onion

The spices and condiments

  • 1 pinch celery seed
  • 1 pinch caraway seed
  • about 10 cracks freshly ground black pepper
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon brown mustard
  • 1 tablespoon brown sugar

The liquid

  • 12 ounces sparkling apple cider

For serving

  • 1 pound sauerkraut
  • as needed serving buns of your choice

Instructions

  1. Melt butter in a large skillet over medium heat.
  2. Add bratwursts in a single layer and brown for 3-4 minutes on one side.
  3. Flip the sausages, add sliced onions, and brown for another 3-4 minutes.
  4. Stir sausages and onions, cooking for another 3-4 minutes until browned and onions caramelize.
  5. Mix in celery seed, caraway seed, pepper, and brown sugar, cooking until onions are golden and tender.
  6. Add apple cider vinegar and mustard, stirring to combine.
  7. Pour in the sparkling apple cider, bring to a boil, then cover and reduce heat to low for 10 minutes.
  8. Increase heat to medium, remove cover, and simmer uncovered for 20-25 minutes until reduced and syrupy.
  9. Remove sausages and keep warm, optionally finishing on the grill.
  10. Add sauerkraut to the pan and heat thoroughly.
  11. Serve sausages on buns with caramelized onions and sauerkraut.
