Ingredients

The potatoes

  • 3 lb organic baby potatoes

The vinegar and salt

  • cup organic apple cider vinegar
  • 2 Tbsp sea salt
  • 1.5 Tbsp Maldon salt flakes

The oil

  • ½ cup Sprouts Organic Extra Virgin Olive Oil

Instructions

  1. Boil the potatoes with vinegar and salt until fork tender.
  2. Preheat the oven to 450ºF and line a baking sheet with parchment paper.
  3. Smash the cooked potatoes and place them in a bowl.
  4. Drizzle the smashed potatoes with olive oil and toss to coat.
  5. Spread the potatoes on the baking sheet and sprinkle with salt flakes.
  6. Roast for 15 minutes, flip, and roast for another 15 minutes.
  7. Spray with vinegar and sprinkle with salt flakes, then roast for an additional 10 minutes until crispy.
