Turkey Meatballs with Sun-dried Tomatoes

Ingredients

The meatballs

  • 1 lb ground turkey
  • cup sundried tomatoes (packed in olive oil), chopped
  • 2 teaspoons olive oil
  • ½ cup onion, finely chopped
  • ¼ cup basil, chopped
  • 2 cloves garlic, finely minced
  • ¾ teaspoon salt
  • ½ teaspoon pepper
  • cup grated pecorino cheese or parmesan

The sauce

  • 2–3 cups marinara sauce

Instructions

  1. Preheat the oven to 425°F.
  2. In a bowl, combine ground turkey, sundried tomatoes, olive oil, onion, basil, garlic, cheese, salt, and pepper, mixing well.
  3. With wet hands, form the mixture into 10-12 meatballs.
  4. For baking, place the meatballs on a parchment-lined sheet pan and bake for 10-12 minutes until golden. For pan-searing, heat oil in a skillet and brown the meatballs on all sides.
  5. Simmer the cooked meatballs in marinara sauce for 5 minutes until fully cooked.
  6. Garnish with torn basil leaves and serve over pasta or with vegetables.
