Ingredients

  • 4 filets salmon
  • ½ cup cooked white rice
  • ½ cup cooked crab meat
  • 1 cup cooked shrimp, chopped
  • ½ cup breadcrumbs
  • ½ cup grated Monterey Jack cheese
  • ¼ cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon dried parsley
  • ½ teaspoon dried onion powder
  • ¼ teaspoon garlic powder
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • optional fresh lemon wedges

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Prepare the salmon by cutting a slit down the center of each filet.
  3. In a mixing bowl, combine the rice, crab meat, shrimp, breadcrumbs, cheese, mayonnaise, lemon juice, parsley, onion powder, garlic powder, salt, and pepper.
  4. Stuff the filling mixture into the slits of the salmon filets.
  5. Place the stuffed salmon on the baking sheet and bake for 25-30 minutes until cooked through.
  6. Let the salmon cool for a few minutes before serving with lemon wedges.
