Homemade Toaster Strudel

Ingredients

The pastry

  • 2 sheets puff pastry
  • cup berry jam
  • 2 tsp cornstarch
  • 1 large egg
  • 1 Tbsp water

The icing

  • Tbsp salted butter
  • 1 cup powdered sugar
  • Tbsp half and half
  • ¼ tsp vanilla extract
  • tsp almond extract

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Thaw the puff pastry and cut each sheet into 6 equal rectangles.
  3. Whisk together the jam and cornstarch, then spread over half of the rectangles, leaving edges uncovered.
  4. Whisk the egg with water and brush the edges of the rectangles with the egg mixture.
  5. Layer the second puff pastry rectangle over the jam-coated ones and press the edges to seal.
  6. Brush the tops with the egg mixture and bake until golden brown, about 20 minutes.
  7. Cool slightly and prepare the icing by whisking together all icing ingredients until well blended.
  8. Drizzle the icing over the cooled strudels.
