Ingredients

The dough

  • cup whole-wheat flour (plus extra for rolling out the dough)
  • ½ tsp salt
  • 1 cup butter (cold, unsalted, 2 sticks)
  • ½ cup water (plus ice)
  • 1 large egg (beaten with a splash of water)

The filling

  • 8 tbsp jam (preferably homemade or all-fruit spread)

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. In a food processor, combine flour and salt, then pulse briefly.
  3. Fill a measuring cup with ½ cup of water and add ice cubes.
  4. Cut cold butter into ½ inch chunks and sprinkle over the flour mixture.
  5. Blend until the mixture resembles a crumbly meal, then add 1/3 cup of water gradually until a dough forms.
  6. Transfer the dough to a floured surface and roll it out to about ¼ inch thick.
  7. Cut the dough into 14 to 16 rectangles.
  8. Place half of the rectangles on the baking sheet, spoon jam onto the center, and top with the remaining rectangles.
  9. Seal the edges with a fork and make holes on top.
  10. Brush with egg wash and bake for 18 to 24 minutes until golden brown.
  11. Cool on a rack and store in the fridge or freezer.
