Ingredients

  • 2 cups whole-wheat flour (or whole-wheat pastry flour)
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • 4 tablespoons cold unsalted butter
  • 1 cup milk (any kind)

Instructions

  1. Preheat the oven to 450°F (232°C).
  2. In a medium bowl, whisk together the dry ingredients.
  3. Cut the cold butter into small pieces and mix it into the dry mixture.
  4. Mash the butter into the mixture until it resembles coarse crumbs.
  5. Pour in the milk and mix until combined.
  6. Knead the dough gently 8-10 times and then pat it to a ¾-inch thickness on a floured surface.
  7. Cut out biscuits using a drinking glass or cookie cutter.
  8. Place the biscuits on an ungreased baking sheet and bake for 10-12 minutes until golden brown.
