Cranberry Vinaigrette

Ingredients

  • ½ cup leftover cranberry sauce
  • 2 tablespoons balsamic vinegar (or vinegar of choice)
  • 2 tablespoons extra virgin olive oil
  • ¼ cup water, plus more as needed
  • to taste fine sea salt
  • to taste black pepper

Instructions

  1. Combine the cranberry sauce, vinegar, olive oil, water, and a pinch of salt and pepper in a blender.
  2. Secure the lid and blend until smooth.
  3. If the dressing isn't smooth, add 2 to 4 more tablespoons of water and blend again until desired consistency is reached.
  4. Taste the dressing and adjust the flavor if needed, adding honey or maple syrup for sweetness or more vinegar for tang.
  5. Serve immediately or store in an airtight container in the fridge for up to 5 days.
