Instructions
- Mix mayo, chipotle pepper, and bourbon in a bowl and refrigerate.
- Combine maple syrup, bourbon, and cayenne in a small bowl.
- Cook bacon in a skillet over medium-low heat, flipping and brushing with the glaze until crispy.
- Remove bacon and drain on paper towels, drizzling with more glaze.
- Slice tomatoes, drizzle with olive oil, and season with salt and pepper.
- Toast bread and spread chipotle mayo on two slices.
- Melt gouda cheese on all slices under the broiler.
- Layer lettuce, tomatoes, avocado, and bacon on the mayo-spread slices.
- Top with a fried egg, season, and close the sandwich with the cheesy bread.
