Heirloom Tomato BLT w/Fried Eggs + Smoked Gouda

Ingredients

The Bacon

  • 4-6 slices thick cut bacon
  • 3 tablespoons pure maple syrup
  • 2 tablespoons bourbon
  • ¼ teaspoon cayenne pepper

The Sandwich

  • 4 slices whole grain bread
  • 2-4 ounces smoked gouda cheese
  • 2 cups spring lettuce mix
  • 2 slices heirloom or regular tomatoes
  • 1 whole avocado
  • 2 fried eggs fried eggs
  • to taste salt and pepper

Chipotle Bourbon Mayo (optional)

  • ½ cup good quality mayo
  • 1 inch chipotle chile adobo
  • 1 teaspoon bourbon

Instructions

  1. Mix mayo, chipotle pepper, and bourbon in a bowl and refrigerate.
  2. Combine maple syrup, bourbon, and cayenne in a small bowl.
  3. Cook bacon in a skillet over medium-low heat, flipping and brushing with the glaze until crispy.
  4. Remove bacon and drain on paper towels, drizzling with more glaze.
  5. Slice tomatoes, drizzle with olive oil, and season with salt and pepper.
  6. Toast bread and spread chipotle mayo on two slices.
  7. Melt gouda cheese on all slices under the broiler.
  8. Layer lettuce, tomatoes, avocado, and bacon on the mayo-spread slices.
  9. Top with a fried egg, season, and close the sandwich with the cheesy bread.
