Breakfast BLT Egg Sandwich

Ingredients

  • 3 slices center cut bacon
  • 1 large egg
  • 2 slices light whole wheat bread
  • 2 to 3 leaves iceberg lettuce
  • 2 slices beefsteak tomatoes
  • 1 tablespoon light mayo

Instructions

  1. 1. Heat a medium nonstick skillet over medium heat and cook the bacon until crisp.
  2. 2. Set the bacon aside on a paper towel and wipe some of the fat from the skillet.
  3. 3. Crack the egg into the skillet, cover, and cook until the yolk is set.
  4. 4. Toast the bread while the egg is cooking.
  5. 5. Assemble the sandwich with mayo on the bottom, followed by the egg, lettuce, bacon, and tomatoes.
  6. 6. Cut the sandwich in half and serve immediately.
