Edamame Guacamole

Ingredients

  • 1 cup frozen shelled edamame, thawed
  • 1 ripe avocado peeled and pitted
  • ½ cup chopped cilantro
  • 2 cloves garlic, minced
  • ¼ onion roughly chopped
  • ½ jalapeno finely chopped
  • Juice of 2 limes
  • 2 to 3 tablespoons water
  • to taste salt
  • to taste freshly ground black pepper

Instructions

  1. Combine edamame, avocado, cilantro, garlic, onion, jalapeno, and lime juice in a food processor.
  2. Pulse until combined, then add water to achieve a creamy consistency and pulse again until smooth.
  3. Transfer the guacamole to a serving bowl and season with salt and pepper.
  4. Stir and serve with chips or vegetables.
