Edamame Hummus

Ingredients

The hummus

  • 200 g frozen Edamame beans
  • 3 tbs Fresh lemon juice
  • ¼ cup Tahini
  • 2 tbs Olive oil
  • ½ tsp Salt
  • ½ tsp Ground cumin
  • 1 cube frozen minced garlic
  • 2 tbs Water

Garnishes

  • to taste sesame seeds
  • to taste thinly sliced radish
  • to taste chopped shiso leaves

Instructions

  1. Thaw the shelled edamame at room temperature or microwave for a couple of minutes.
  2. Hull the edamame beans one by one for a smoother texture.
  3. In a food processor, combine lemon juice and tahini and process until creamy.
  4. Add olive oil, salt, ground cumin, and garlic to the processor and blend for another minute.
  5. Incorporate the edamame beans (reserve a few for topping) and water, then process until smooth.
  6. Serve in a bowl, topping with reserved edamame, garnishing with radish, shiso leaves, and sesame seeds.
