Edamame Hummus

Ingredients

The hummus

  • cups frozen shelled edamame, thawed
  • 1 medium ripe avocado
  • 2 cloves garlic
  • 1 large lemon (zest and juice)
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon onion powder
  • 3 tablespoons finely chopped fresh cilantro
  • 3 tablespoons olive oil

For serving

  • to taste pita chips and veggies

Instructions

  1. Puree the edamame, avocado, garlic, lemon zest, lemon juice, kosher salt, black pepper, onion powder, and cilantro in a food processor until blended.
  2. With the processor running, drizzle in the olive oil and blend until combined.
  3. Taste and adjust seasoning with additional salt and pepper if needed.
  4. Serve with pita chips and veggies.
