Edamame Hummus

Ingredients

The base

  • 1 1/4 cups shelled edamame
  • 1-1 1/2 tablespoons tahini
  • 3/4 teaspoon minced garlic
  • 3 teaspoons extra virgin olive oil
  • 1 1/2-2 tablespoons lemon juice
  • 1/4 teaspoon kosher salt
  • a few cracks black pepper
  • 3-4 tablespoons water

Toppings

  • 2-3 tablespoons diced roasted red bell pepper
  • to taste toasted sesame seeds

Instructions

  1. Combine edamame, tahini, garlic, 2 teaspoons of olive oil, lemon juice, salt, and pepper in a food processor.
  2. Pulse several times and scrape down the sides as needed.
  3. Add water gradually until the mixture blends smoothly.
  4. Process for several minutes until mostly smooth.
  5. Taste and adjust seasoning with salt and pepper as desired.
  6. Transfer to a serving bowl and top with diced roasted red bell pepper.
  7. Drizzle with the remaining olive oil and sprinkle with sesame seeds.
