Edamame Hummus
Ingredients
The base

shelled edamame

tahini

minced garlic

extra virgin olive oil

lemon juice

Toppings

diced roasted red bell pepper

Instructions
- Combine edamame, tahini, garlic, 2 teaspoons of olive oil, lemon juice, salt, and pepper in a food processor.
- Pulse several times and scrape down the sides as needed.
- Add water gradually until the mixture blends smoothly.
- Process for several minutes until mostly smooth.
- Taste and adjust seasoning with salt and pepper as desired.
- Transfer to a serving bowl and top with diced roasted red bell pepper.
- Drizzle with the remaining olive oil and sprinkle with sesame seeds.
