Edamame Basil Hummus

Ingredients

The hummus

  • 2 cups shelled cooked edamame
  • cup garbanzo beans (chickpeas), drained and rinsed
  • 3 cloves garlic
  • ½ cup fresh basil
  • ¼ cup lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon freshly cracked pepper
  • cup extra-virgin olive oil

For serving

  • to taste chips, crackers, or veggies

Instructions

  1. Reserve one tablespoon each of the edamame and garbanzo beans for garnish.
  2. In a food processor, blend the remaining edamame and garbanzo beans with garlic, basil, lemon juice, salt, and pepper.
  3. Slowly pour the olive oil through the feed tube while the processor is on until smooth and well blended.
  4. Adjust salt and pepper to taste.
  5. Pour into a serving bowl and garnish with reserved edamame, garbanzo beans, olive oil, and basil.
  6. Serve with chips, crackers, or veggies.
