Edamame Hummus

Ingredients

The hummus

  • cup tahini
  • cup lemon juice
  • 3 tablespoons extra-virgin olive oil
  • 1 medium clove garlic
  • ½ teaspoon fine-grain sea salt
  • ½ cup fresh cilantro leaves
  • 1 ½ cups shelled edamame
  • 2 to 4 tablespoons water

For garnish

  • optional sesame seeds
  • as needed drizzle olive oil
  • as needed cilantro leaves

Instructions

  1. Combine tahini, lemon juice, olive oil, garlic, and salt in a food processor and blend until smooth.
  2. Add cilantro and blend until mixed in smoothly.
  3. Add half of the edamame and 2 tablespoons of water, then process until smooth.
  4. Scrape the bowl and add the remaining edamame, processing until the hummus is thick and smooth, adding more water if needed.
  5. Taste and adjust salt if necessary, then transfer to a serving bowl.
  6. Drizzle with olive oil and garnish with cilantro and sesame seeds if desired.
