Cider Roasted Split Turkey Breast

Instructions
- Preheat the oven to 350ºF.
- Mix butter, sage, rosemary, thyme, and salt in a bowl to form a paste.
- Pat the turkey breast dry and create a pocket by separating the skin from the meat.
- Spread ⅓ of the herb butter mixture under the skin and the rest on top of the skin.
- Slice the apple and onion into wedges and place them in a casserole dish.
- Place the turkey breast on top of the apple and onion, then pour the apple cider into the dish.
- Roast the turkey for about 1.5 hours, checking for an internal temperature of 165ºF.
- Let the turkey rest for at least 10 minutes before slicing and serving with the roasted vegetables and drippings.
