Cider Roasted Split Turkey Breast

Ingredients

The turkey

  • 2.5 lb. Split turkey breast (bone-in, skin on)

The herb butter

  • 4 Tbsp butter, room temperature
  • 1 tsp dried sage
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • ¾ tsp salt

The vegetables

  • 1 large apple
  • 1 onion

The liquid

  • ½ cup apple cider

Instructions

  1. Preheat the oven to 350ºF.
  2. Mix butter, sage, rosemary, thyme, and salt in a bowl to form a paste.
  3. Pat the turkey breast dry and create a pocket by separating the skin from the meat.
  4. Spread ⅓ of the herb butter mixture under the skin and the rest on top of the skin.
  5. Slice the apple and onion into wedges and place them in a casserole dish.
  6. Place the turkey breast on top of the apple and onion, then pour the apple cider into the dish.
  7. Roast the turkey for about 1.5 hours, checking for an internal temperature of 165ºF.
  8. Let the turkey rest for at least 10 minutes before slicing and serving with the roasted vegetables and drippings.
