Grilled Cheese and Fried Egg Sandwiches

Ingredients

  • 12 slices pancetta
  • 2 tablespoons butter
  • 4 slices sourdough bread
  • 8 thin slices provolone cheese
  • 4 large eggs
  • 1 small green onion, chopped
  • Parmesan cheese shavings
  • 12 leaves fresh basil or arugula

Instructions

  1. Cook pancetta in a skillet over medium-high heat until crisp and transfer to paper towels.
  2. Melt butter in a nonstick skillet over medium heat, add bread slices, top with provolone, and cook until cheese melts.
  3. In the skillet with pancetta drippings, crack eggs and cook until whites are set and yolks are runny.
  4. Assemble sandwiches with pancetta, eggs, green onion, Parmesan, and basil, then top with remaining bread.
  5. Cut sandwiches in half and serve.
