Instructions
- Cook pancetta in a skillet over medium-high heat until crisp and transfer to paper towels.
- Melt butter in a nonstick skillet over medium heat, add bread slices, top with provolone, and cook until cheese melts.
- In the skillet with pancetta drippings, crack eggs and cook until whites are set and yolks are runny.
- Assemble sandwiches with pancetta, eggs, green onion, Parmesan, and basil, then top with remaining bread.
- Cut sandwiches in half and serve.
