Ingredients

The potatoes

  • lbs russet potatoes

The cooking oil

  • ¼ cup olive oil or vegetable oil

Seasoning

  • to taste salt
  • to taste pepper

Instructions

  1. Shred the potatoes using a box grater.
  2. Rinse the shredded potatoes in a fine mesh sieve or colander and drain.
  3. Preheat a 12-inch cast iron pan over medium-high heat.
  4. Squeeze out excess liquid from half of the potatoes using cheesecloth or a potato ricer, then spread them on paper towels.
  5. Repeat the squeezing process with the second half of the potatoes.
  6. Press the potatoes dry with more paper towels and season with salt and pepper.
  7. Add oil to the pan, ensuring it coats the bottom evenly, then add the potatoes and flatten them with a spatula.
  8. Cook undisturbed for about 3-4 minutes until golden brown, then flip the potatoes in portions.
  9. Brown the opposite side for another 3-4 minutes, then toss and cook until tender, about 2 minutes more.
  10. Serve immediately, optionally with ketchup.
