Instructions
- Shred the potatoes using a box grater.
- Rinse the shredded potatoes in a fine mesh sieve or colander and drain.
- Preheat a 12-inch cast iron pan over medium-high heat.
- Squeeze out excess liquid from half of the potatoes using cheesecloth or a potato ricer, then spread them on paper towels.
- Repeat the squeezing process with the second half of the potatoes.
- Press the potatoes dry with more paper towels and season with salt and pepper.
- Add oil to the pan, ensuring it coats the bottom evenly, then add the potatoes and flatten them with a spatula.
- Cook undisturbed for about 3-4 minutes until golden brown, then flip the potatoes in portions.
- Brown the opposite side for another 3-4 minutes, then toss and cook until tender, about 2 minutes more.
- Serve immediately, optionally with ketchup.
