Ingredients

The dressing

The salad

  • 2 tablespoons olive oil
  • 1 package ramen noodles, crumbled
  • ¼ cup sliced almonds
  • 1 bunch baby bok choy, sliced
  • 5 pieces scallions, chopped

Instructions

  1. Prepare the dressing by whisking together the brown sugar, olive oil, vinegar, sesame seeds, and soy sauce in a small bowl. Let it sit at room temperature.
  2. In a large saucepan, heat olive oil over medium heat until shimmering. Lower the heat and add the ramen noodles and almonds, sautéing until toasted for about 10 minutes.
  3. In a large bowl, combine the baby bok choy, scallions, and the toasted ramen mixture. Drizzle the dressing over the salad and toss to combine. Serve at room temperature.
