Ingredients

The salad

  • pounds bok choy

The sesame-almond crunch

  • 1 cup slivered or sliced almonds
  • ¼ cup sugar
  • cup sesame seeds
  • ½ teaspoon flaky sea salt

The dressing

  • 1 to 3 tablespoons sugar
  • ¼ cup grapeseed oil or olive oil
  • 2 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 6 pieces green onions

Instructions

  1. Prepare the bok choy by slicing it and soaking it in cold water.
  2. Toast the almonds and sesame seeds in a dry skillet until golden brown.
  3. Melt sugar in the same pan until it liquefies, then add the toasted almonds, sesame seeds, and sea salt.
  4. Prepare the dressing by boiling the dressing ingredients until the sugar dissolves, then add the green onions.
  5. Drain the bok choy and transfer it to a salad bowl, then toss with the dressing.
  6. Add the sesame-almond crunch just before serving and toss well.
