Instructions
- Preheat the oven to 350°F and prepare baking sheets with parchment paper.
- Crush graham crackers to measure out ½ cup for the dough and set aside extra for topping.
- In a mixing bowl, cream together peanut butter, butter, and brown sugar until light and fluffy.
- Add the egg and vanilla, mixing until combined. Then incorporate flour, graham cracker crumbs, and baking soda until a smooth dough forms.
- Fold in chocolate chips and marshmallows.
- Roll the dough into 1-inch balls and place them on the baking sheets, spacing them 2 inches apart.
- Optionally, top the dough balls with extra chocolate chips and marshmallows.
- Bake for about 10 minutes, allowing them to cool on the baking sheet for 10 minutes before serving.
