Instructions
- Pat the chicken breasts dry and season with salt and pepper.
- Heat olive oil in a skillet and sauté the chicken until golden brown and cooked through, then transfer to a plate.
- Add more olive oil and sauté minced garlic until fragrant.
- Deglaze the pan with chicken broth, scraping up any browned bits, and simmer until reduced by half.
- Add heavy cream and thyme, simmer until thickened, then stir in Dijon mustard.
- Serve the chicken with the sauce poured over it.
