Chicken Dijon

Ingredients

The chicken

  • 4 oz Boneless skinless chicken breasts

The seasoning

  • ½ tsp Sea salt
  • ¼ tsp Black pepper

The cooking oil

  • 2 tbsp Olive oil

The sauce

  • 2 cloves Garlic (minced)
  • ½ cup Chicken broth (reduced sodium)
  • cup Heavy cream (or coconut cream for dairy-free)
  • 1 tbsp Fresh thyme
  • 2 tbsp Whole grain Dijon mustard

Instructions

  1. Pat the chicken breasts dry and season with salt and pepper.
  2. Heat olive oil in a skillet and sauté the chicken until golden brown and cooked through, then transfer to a plate.
  3. Add more olive oil and sauté minced garlic until fragrant.
  4. Deglaze the pan with chicken broth, scraping up any browned bits, and simmer until reduced by half.
  5. Add heavy cream and thyme, simmer until thickened, then stir in Dijon mustard.
  6. Serve the chicken with the sauce poured over it.
