Grilled Dijon Chicken

Ingredients

The chicken

  • 4 pieces boneless skinless chicken breasts

The sauce

  • ¼ cup Dijon mustard
  • ¼ cup mayonnaise
  • teaspoons minced fresh garlic
  • to taste salt
  • to taste black pepper
  • 1 tablespoon minced fresh parsley (optional)

Instructions

  1. Preheat a gas grill over medium-high heat to about 425 degrees.
  2. In a small mixing bowl, stir together Dijon mustard, mayonnaise, garlic, and season with salt and pepper to taste.
  3. Pound thicker portions of chicken with a meat mallet to even the thickness.
  4. Brush the top side of chicken pieces with plenty of the mustard sauce.
  5. Place the chicken on the preheated grill, sauce-coated side down, and brush the uncoated side with mustard sauce.
  6. Cover and grill until the chicken registers 165 degrees in the center of the thickest portion, about 4 minutes per side.
  7. Sprinkle with parsley if using and serve warm.
