Ingredients

The steak

  • 2 pounds boneless strip steaks, 1½ to 1¾ inches thick, trimmed

The seasoning and cooking fat

  • to taste Diamond Crystal kosher salt
  • to taste freshly ground black pepper
  • 1 tablespoon ghee

Instructions

  1. Preheat the oven to 275°F with the rack in the middle position.
  2. Pat the steaks dry with paper towels and trim off excess fat and silverskin.
  3. Cut each steak in half vertically to create four portions.
  4. Combine salt and pepper in a bowl and sprinkle over the steaks.
  5. Place the steaks on a wire rack set in a rimmed baking sheet.
  6. Insert a meat thermometer into the center of a steak and cook in the oven until the meat registers 90°F to 95°F for rare to medium-rare, about 20 to 25 minutes.
  7. For medium steaks, remove from the oven when the temperature reaches 100°F to 105°F, about 25 to 30 minutes.
  8. Heat a 12-inch cast iron skillet over high heat and swirl in the ghee.
  9. Sear the steaks for about 2 minutes on each side until browned and crusty.
  10. Transfer the steaks to a wire rack and reduce the heat to medium.
  11. Using tongs, sear the edges of the steaks for about 20 seconds each.
  12. Tent the steaks loosely with foil and let them rest for at least 10 minutes before slicing.
