Perfect Steak

boneless strip steaks, 1½ to 1¾ inches thick, trimmed
The seasoning and cooking fat

Instructions
- Preheat the oven to 275°F with the rack in the middle position.
- Pat the steaks dry with paper towels and trim off excess fat and silverskin.
- Cut each steak in half vertically to create four portions.
- Combine salt and pepper in a bowl and sprinkle over the steaks.
- Place the steaks on a wire rack set in a rimmed baking sheet.
- Insert a meat thermometer into the center of a steak and cook in the oven until the meat registers 90°F to 95°F for rare to medium-rare, about 20 to 25 minutes.
- For medium steaks, remove from the oven when the temperature reaches 100°F to 105°F, about 25 to 30 minutes.
- Heat a 12-inch cast iron skillet over high heat and swirl in the ghee.
- Sear the steaks for about 2 minutes on each side until browned and crusty.
- Transfer the steaks to a wire rack and reduce the heat to medium.
- Using tongs, sear the edges of the steaks for about 20 seconds each.
- Tent the steaks loosely with foil and let them rest for at least 10 minutes before slicing.
