Vegetable & Plantain Moqueca

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 medium red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 hot chili pepper such as fresno or jalapeño (optional)
  • 1 14-ounce can coconut milk
  • 1 14-ounce can diced tomatoes
  • 1 tablespoon lime juice
  • 2 teaspoons sweet paprika
  • 2 ripe plantains, cut into 1-inch chunks
  • 1 medium zucchini, chopped
  • to taste salt and pepper
  • ¼ cup chopped fresh cilantro plus extra for serving
  • ¼ cup chopped scallions
  • to serve cooked rice

Instructions

  1. Heat olive oil in a medium pot over medium heat and sauté onion and bell pepper until translucent.
  2. Add minced chili pepper and garlic, sautéing until fragrant.
  3. Stir in coconut milk, tomatoes, lime juice, and paprika, then bring to a simmer.
  4. Add plantains and simmer for an additional 5 minutes.
  5. Incorporate zucchini and continue simmering until both zucchini and plantains are tender.
  6. Season with salt and pepper, then mix in cilantro and scallions.
  7. Serve the stew over rice, garnished with additional cilantro and chili slices if desired.
