Instructions
- Heat olive oil in a medium pot over medium heat and sauté onion and bell pepper until translucent.
- Add minced chili pepper and garlic, sautéing until fragrant.
- Stir in coconut milk, tomatoes, lime juice, and paprika, then bring to a simmer.
- Add plantains and simmer for an additional 5 minutes.
- Incorporate zucchini and continue simmering until both zucchini and plantains are tender.
- Season with salt and pepper, then mix in cilantro and scallions.
- Serve the stew over rice, garnished with additional cilantro and chili slices if desired.
