Ingredients

The cookies

  • 2 ½ cups old fashioned oats
  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 cup brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup canola oil or melted coconut oil
  • 2 large eggs
  • 4 teaspoons vanilla extract
  • 2 cups semi-sweet chocolate chips or chocolate chunks
  • 1 cup crushed graham cracker crumbs

The s'mores

  • 12 marshmallows
  • 2 bars Hershey's Milk Chocolate

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine oats, flour, sugars, baking soda, salt, canola oil, eggs, and vanilla until the dough is moist.
  3. Mix in the graham cracker crumbs and chocolate chips.
  4. Form tablespoon-sized balls of dough and place them on the baking sheet.
  5. Bake cookies until golden, about 10-15 minutes.
  6. To assemble the s'mores, place two squares of chocolate on a warm cookie, top with a roasted marshmallow, and sandwich with another cookie.
