Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a mixing bowl, combine oats, flour, sugars, baking soda, salt, canola oil, eggs, and vanilla until the dough is moist.
- Mix in the graham cracker crumbs and chocolate chips.
- Form tablespoon-sized balls of dough and place them on the baking sheet.
- Bake cookies until golden, about 10-15 minutes.
- To assemble the s'mores, place two squares of chocolate on a warm cookie, top with a roasted marshmallow, and sandwich with another cookie.
