Basil Arugula Cashew Cream

Ingredients

The cream

  • 1 cup raw cashews
  • ½ cup plant-based milk, plain, unsweetened
  • ½ small lemon, juiced
  • 1 clove garlic
  • 2 tablespoons fresh arugula
  • 2 tablespoons fresh basil
  • a pinch salt and pepper (optional)

For soaking

  • Water

Instructions

  1. Soak cashews in hot water for 3 hours or in boiling water for 20 minutes.
  2. Drain the soaked cashews.
  3. Blend the cashews with plant-based milk, lemon juice, garlic, arugula, and basil until smooth.
  4. Adjust seasoning with salt and pepper if desired.
  5. Serve immediately or store in an airtight container in the refrigerator for up to one week.
