Ingredients

The chicken

  • 1 lb boneless skinless chicken breasts

The vegetables

  • 1 large head broccoli
  • 2 medium red bell peppers
  • 1 cup snap peas

The sauce

  • ¼ cup lower-sodium soy sauce
  • 1 Tbsp sweet chili sauce
  • 2 Tbsp honey
  • 2 cloves garlic
  • 1 tsp fresh ginger
  • to taste salt
  • to taste pepper

Optional toppings

  • to taste sesame seeds
  • to taste green onions

Instructions

  1. Preheat the oven to 400°F.
  2. Prepare the sauce by heating soy sauce, sweet chili sauce, honey, garlic, and ginger in a saucepan until boiling, then simmer until thick.
  3. Spread the chicken and chopped vegetables on a baking sheet, season with salt and pepper, and drizzle half the sauce over them.
  4. Bake for about 20 minutes, tossing halfway through, until the chicken is cooked and vegetables are tender.
  5. Drizzle the remaining sauce over the dish, and sprinkle with sesame seeds and green onions before serving.
