Ingredients

The base

  • 1 cup natural creamy peanut butter
  • 2 tablespoons virgin coconut oil
  • 3 tablespoons maple syrup or honey
  • 1 teaspoon pure vanilla extract
  • cups old-fashioned oats
  • ¼ cup unsweetened shredded coconut
  • ¼ cup ground flaxseed
  • 1 tablespoon chia seeds
  • a pinch fine salt
  • cup mini chocolate chips

Optional

  • ¼ cup protein powder or collagen

Instructions

  1. Optionally, pulse oats in a food processor for a chunkier texture.
  2. In a bowl, combine oats, coconut flakes, ground flaxseed, chia seeds, and salt.
  3. Add peanut butter, coconut oil, maple syrup, and vanilla; mix well.
  4. Incorporate chocolate chips into the mixture.
  5. Roll the mixture into 26-28 small balls, adding water if needed to help it stick.
  6. Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months.
