Ingredients

The muffins

  • 1 cup frozen blueberries
  • 1 cup all-purpose baking flour or gluten-free baking flour
  • cup coconut sugar or regular sugar
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • ¼ cup unsweetened applesauce
  • 1 large egg, lightly beaten
  • ¼ cup melted butter, ghee, or coconut oil
  • 1 teaspoon vanilla extract
  • ¼ cup milk or unsweetened almond milk

For preparation

  • as needed nonstick cooking spray

Instructions

  1. Spray a silicone mini muffin pan with nonstick cooking oil.
  2. Combine the frozen blueberries, flour, sugar, salt, and baking powder in a large mixing bowl and stir.
  3. In a small bowl, combine the applesauce, egg, butter, vanilla extract, and milk, then stir.
  4. Pour the wet mixture into the dry mixture and stir to combine.
  5. Fill the muffin wells ¾ of the way full with batter.
  6. Place the muffin pan in the air fryer and set the temperature to 360°F for 10 minutes.
  7. After baking, transfer the muffins to a cooling rack and repeat the process for the remaining batter.
  8. Serve warm or at room temperature.
