Healthful Double Chocolate Cookies

Instructions
- Preheat the oven to 350°F with the racks in the top third.
- In a large bowl, combine the mashed bananas, vanilla extract, and coconut oil.
- In another bowl, whisk together the oats, ground sunflower seeds, cacao powder, shredded coconut, salt, and baking powder.
- Add the dry ingredients to the wet ingredients and stir until combined.
- Fold in the chocolate chunks or chips.
- Drop dollops of the dough, about 1-2 tablespoons each, onto a lined baking sheet, spaced an inch apart.
- Bake for 13-15 minutes until golden on the bottoms.
